Chocolate Cupcake

Resep ini gampang banget untuk di bikin, rasa coklatnya intens dan yang paling penting.... teksturnya lembut banget.... terus gampang banget buat di modifikasi.... resep andalan buat tukang kue yang malas menghafal terlalu banyak resep, hehehehhe

Bahan :

1/2 cup (50 gram) coklat bubuk Dutch-processed (merk : Van Houten, Bordeaux, dll)
1 cup (240 ml) air mendidih
1 1/3 cups (175 gram) terigu serbaguna (segitiga)
2 sdt baking powder 
1/4 sdt garam
1/2 cup (113 gram) mentega tawar (unsalted butter), suhu ruang
1 cup (200 gram) gula tepung
2 telur antero, ukuran besar
2 sdt vanilla extract

Cara membuat :

  1. Panaskan oven, 190 celcius. Masukkan papercup ke dalam loyang cupcake (Jo : pake loyang muffin 12 pcs)
  2. Campur coklat bubuk dengan air mendidih, aduk rata, sisihkan hingga suhu ruang.
  3. Ayak semua bahan kering, sisihkan
  4. Kocok mentega + gula tepung hingga pucat dan mengembang. Masukkan 1 butir telur, kocok rata. tambahkan 1 butir telur sisanya, kocok rata.
  5. tambahkan 1/2 bagian terigu, kocok kecepatan rendah seratanya, tambahkan 1/2 bagian cairan coklat, aduk rata. lakukan serupa dengan sisa adonan terigu dan coklat
  6. masukkan adonan ke dalam cup, isi 2/3 penuh. (1 resep = 12 cup loyang muffin)
  7. panggang +/- 16- 20 menit
  8. biarkan hingga agak dingin dalam loyangnya, keluarkan. 
  9. simpan dalam kontainer tertutup hingga siap untuk dihias

(30 mins cooking) Simple Shoyu Ramen

Shoyu Ramen
Sejak pindah ke atas gunung, ditambah dengan datangnya musim hujan, pilihan sajian diatas meja tidak pernah jauh2 dari sup dan sejenisnya.
Hidangan ini gampang banget di bikinnya, tinggal cemplung doang dan hasilnya ga kalah kok dengan di resto ^^
Ga percaya ? bikin dan buktikan.... nyokkkkkk


Bahan :

2-2,5 liter air
2 sachet Dashimoto
1 centong besar kecap Kikkoman
2 buah bawang bombay ukuran kecil, iris tebal
1-2 lembar Nori
1 bungkus mie kering jepang, rebus hingga lunak, sisihkan

Cara Membuat :
  1. Didihkan Air, masukkan dashimoto, bawang bombay, kecap dan nori. Kecilkan api, biarkan menggolak kecil sekitar 7-10 menit, untuk mengeluarkan aromanya.
  2. Tata mie jepang dalam 3-4 mangkuk, siram dengan kuah panas. Sajikan
*note : untuk variasi : tambahkan daging sukiyaki ke dalam kuah saat 1 menit terakhir, atau rebus air bersama lobak hingga empuk baru tambahkan bahan kuah yang lain. Atau bikin goreng udang seperti contoh foto ^^

Smokebeef and Cheese Bread

variasi rasa dari resep yang sama (keju, coklat, ham & cheese)

Resep hasil nyontek dari Christine's Recipe

Hasilnya wangi susu, lembut banget, tapi bukan lembut yang isinya angin ya ^^ masih ada padat2nya roti tanpa obat.

resep ini bisa dibuat dengan menggunakan bread maker.

siapkan loyang 10.5cm x 20.5cm x10cm

Bahan tangzhong (cukup untuk 2 resep):
  • 50g terigu protein tinggi / cakra
  • 250ml air ( atau susu, dapat pula di pakai 50/50)
Bahan Roti:
  • 350g terigu cakra
  • 55g gula kastor
  • 5g garam
  • 56g telur (1 butir besar)
  • 7g susu bubuk (optional)
  • 125ml susu
  • 120g tangzhong (setengah dari resep diatas)
  • 5 to 6g ragi instant (1/2 bungkus)
  • 30g mentega (biarkan suhu ruang)
Isi:
  • smokebeef
  • keju cheddar parut
Cara buat tangzhong:
  1. campur terigu dan air, aduk hingga rata dan tidak menggumpal. masak diatas api sedang sambil diaduk supaya tidak gosong.
  2. saat adonan menjadi semakin kental, dan terlihat garis2 (jejak garis) yang terbentuk setiap kali diaduk, matikan api.
  3. pindahkan ke mangkuk, tutup permukaan adonan dengan plastik lengket. simpan di kulkas selama beberapa jam. keluarkan tangzhong beberapa saat sebelum digunakan supaya bersuhu ruangan. Tangzhong bisa di simpan selama beberapa hari di kulkas selama tidak berubah warna atau aroma.
Cara membuat roti:
  1. campur semua bahan kering + tangzhong, kecuali garam. masukkan telur dan susu (selalu sisakan sedikit susu, takut terigunya lembab) uleni hingga kalis, tambahkan garam + mentega, teruskan uleni hingga elastis.
  2. bulatkan adonan, simpan dalam mangkuk dan tutup. diamkan hingga adonan mengembang 2 kali lipat.
  3. pindahkan ke atas meja yang sudah ditabur tepung terigu. bagi jadi 4 bagian, uleni dan bentuk bola. diamkan 15 menit.
  4. giling adonan hingga tipis, taburi smokebeef keju parut, gulung. giling kembali dan gulung. taruh dalam loyang. lakukan hal yang sama dengan 3 bagian lainnya.
  5. susun yang rapih ke empat adonan roti itu dalam loyang, biarkan mengembang hingga louang 3/4 penuh.
  6. olesi kocokan telur, panggang 40 menit dalam oven bersuhu 180 celcius
  7. keluarkan dari loyang, biarkan dingin diatas rak kawat. potong dan sajikan

(Beer Batter) Fish and Chips

Modifikasi dari : Jamie Oliver (FoodNetwork)

Bahan :

  • 1/2 cup terigu segitiga
  • 1/2 cup bir putih
  • 1 kuning telur
  • 1 putih telur, kocok hingga soft peaks
  • Garam
  • 250 gram fillet ikan putih, seperti : dori, kakap, dll (bumbui dengan sedikit garam)

Pelengkap :

  • French fries beku secukupnya, goreng hingga kuning keemasan
  • Saus Tartar (Jo :1 buah bawang bombay, cincang halus, aduk bersama 3-4 sendok makan mayonaise & air jeruk nipis)

Cara Membuat

  • Campur bersama terigu, bir, garam, dan kuning telur, hingga rata.
  • masukkan putih telur kocok, aduk rata
  • Panaskan minyak
  • celup ikan ke dalam adonan, goreng beberapa menit hingga kuning keemasan
  • angkat, taruh di kertas tissue untuk menyerap minyaknya
  • hidangkan bersama french fries & saus tartar (Jo : tadi aku ciprati sedikit balsamic vinegar, sebagai pengganti cuka fish & chips)
Jo's Notes :
  • bir bisa di ganti dengan air soda tawar
  • kalau adonan pelapis ada sisa, dikaryakan saja buat bikin onion ring. Caranya : potong 1 buah bawang bombay setebal 1 cm, pisahkan tiap lapisannya, celupkan ke adonan tepung, dan goreng hingga kuning keemasan

Extra Light & Fluffy Pancakes

Ingredients
1 cup sifted all-purpose, pastry, or cake flour (jo : terigu segitiga)
1/8 teaspoon salt
1/2 tablespoon baking powder (jo : double acting baking powder)
2 egg yolks
3/4 cups milk, more or less
4 tablespoons butter, melted
2 egg whites
1 tablespoon sugar

Directions
1. Sift the dry ingredients together.
2. In another bowl, mix the yolks, most of the milk, and the melted butter together until smooth.
3. Make a well in the middle of the dry ingredients and add the mixed wet ingredients all at once. Stir until just combined. (Over-mixing will make for a tough pancake.)
4. Beat the egg whites until light and fluffy and soft peaks appear as for meringue. Add the sugar toward the end of the beating. Fold the egg whites gently into the batter with a spatula. Add milk as necessary to get the right consistency.
5. Cook as you would other pancakes.

1. bikin di wajan teflon, tanpa harus di oles mentega
2. setelah pancake matang, pindahkan ke piring sambil oles tipis permukaannya dengan butter

God
: Hello. Did you call me?
Me: Called you? No.. Who is this ?
God : This is GOD. I heard your prayers. So I thought I will chat.
Me: I do pray. Just makes me feel good. I am actually busy now. I am in the midst of something.
God : What are you busy at? Ants are busy too.
Me: Don't know. But I cant find free time. Life has become hectic. It's rush hour all the time.
God : Sure. Activity gets you busy. But productivity gets you results. Activity consumes time. Productivity frees it.
Me: I understand. But I still can't figure out. By the way, I was not expecting YOU to buzz me on instant messaging chat.
God : Well I wanted to resolve your fight for time, by giving you some clarity. In this net era, I wanted to reach you through the medium you are comfortable with.
Me: Tell me, why has life become complicated now?
God : Stop analyzing life. Just live it. Analysis is what makes it complicated.
Me: Why are we then constantly unhappy?
God : Your today is the tomorrow that you worried about yesterday. You are worrying because you are analyzing. Worrying has become your habit. That's why you are not happy.
Me: But how can we not worry when there is so much uncertainty?
God : Uncertainty is inevitable, but worrying is optional.
Me: But then, there is so much pain due to uncertainty. .
God : Pain is inevitable able, but suffering is optional.
Me: If suffering is optional, why do good people always suffer?
God : Diamond cannot be polished without friction. Gold cannot be purified without fire. Good people go through trials, but don't suffer. With that experience their life become better not bitter.
Me: You mean to say such experience is useful?
God : Yes. In every terms, Experience is a hard teacher . She gives the test first and the lessons afterwards.
Me: But still, why should we go through such tests? Why can’t we be free from problems?
God : Problems are Purposeful Roadblocks Offering Beneficial Lessons (to) Enhance Mental Strength. Inner strength comes from struggle and endurance, not when you are free from problems.
Me: Frankly in the midst of so many problems, we don't know where we are heading..
God : If you look outside you will not know where you are heading.Look inside. Looking outside, you dream. Looking inside, you awaken. Eyes provide sight. Heart provides insight.
Me: Sometimes not succeeding fast seems to hurt more than moving in the right direction. What should I do?
God : Success is a measure as decided by others. Satisfaction is a measure as decided by you. Knowing the road ahead is more satisfying than knowing you rode ahead. You work with the compass. Let others work with the clock.
Me: In tough times, how do you stay motivated?
God : Always look at how far you have come rather than how far you have to go. Always count your blessing, not what you are missing.
Me: What surprises you about people?
God : when they suffer they ask, "why me?" When they prosper, they never ask "Why me" Everyone wishes to have truth on their side, but few want to be on the side of the truth.
Me: Sometimes I ask, who am I, why am I here. I cant get the answer.
God : Seek not to find who you are, but to determine who you want to be. Stop looking for a purpose as to why you are here. Create it. Life is not a process of discovery but a process of creation.
Me: How can I get the best out of life?
God : Face your past without regret. Handle your present with confidence. Prepare for the future without fear.
Me: One last question. Sometimes I feel my prayers are not answered.
God : There are no unanswered prayers. At times the answer is NO.
Me: Thank you for this wonderful chat.
God : Well. Keep the faith and drop the fear . Don't believe your doubts and doubt your beliefs. Life is a mystery to solve not a problem to resolve. Trust me. Life is wonderful if you know how to live. "Life is not measured by the number of breaths we take but by the moments that took our breath away!"

Banana Muffin with Raisins & Cheese


resep dapat dari resep mbak Vania

Muffin ini enak banget rasanya, tekstur muffinnya bagus, moist banget, cantik dengan serat-serat pisangnya, belum lagi wangi pisang yang benar2 menggoda. Luv it ^_^
Rasanya sedikit terlalu manis, tapi kalau ditemani teh/kopi pahit, pasti pas ^_^

Bahan :

3 pisang besar (Jo : 5 pisang ambon sedang yang sangat matang)

3/4 cup gula pasir (150 gr)
1 telur, kocok asal
1 sdt soda kue
1 sdt baking powder
1/2 sdt garam
1-1/2 cup terigu segitiga (225 gr)
1/3 cup mentega, lelehkan (70 gr)
1 gengam kismis

Cara Membuat :
1. Panaskan oven hingga 180C. Oles loyang muffin (yang isi 12)


2. Hancurkan pisang. tambahkan gula dan telur kocok. tambahkan metega cair, aduk rata.Masukkan bahan kering dan kismis, aduk perlahan, hingga semua bahan kering terlihat basah. Seratanya saja, jangan terlalu di aduk. Adonan akhirnya agak kental.

3. Masukkan adonan dengan scoop es krim ke dalam loyang muffin, taburi keju parut, panggang 20- 25 menit
